Pork Chop Skillet
Ingredients:
2 small pork chops (boneless is easiest)
1/2 cup white rice (uncooked)
1 medium zucchini, diced small
1 1/4 cups water
1/2 tsp salt
1/4 tsp pepper (optional)
1 tsp oil, butter, or margarine (optional)
Optional: garlic/onion powder, paprika, or bouillon cube for flavor

Instructions (Microwave Only):
Step 1: Cook the Rice
In a large microwave-safe bowl, combine:
1/2 cup white rice
1 cup water
Pinch of salt
Cover loosely (with a plate or microwave-safe lid) and microwave on HIGH for 8–10 minutes until water is absorbed.
Let sit for 2 minutes. Fluff with a fork.
Step 2: Steam the Zucchini
In a separate bowl, add diced zucchini with a splash (2–3 tbsp) of water.
Cover and microwave for 3–4 minutes until tender. Drain water.
Step 3: Cook the Pork Chops
Place pork chops in a microwave-safe dish.
Add a splash of water (1–2 tbsp) to keep moist.
Sprinkle with salt, pepper, and any seasoning you have.
Cover loosely and microwave on HIGH for 3 minutes per chop (total 6–7 minutes), flipping halfway through.
Check that there’s no pink inside. Add more time if needed (1 min at a time).
Optional: Cut into pieces before cooking for faster results.
Step 4: Combine & Serve
Mix cooked pork (sliced or chopped), rice, and zucchini in one bowl.
Add oil or margarine for flavor (optional).
Stir, taste, and adjust salt/seasoning.
