Chickpea Vegetable Stew

Ingredients (serves 2‑3)
1 can garbanzo beans (15 oz), drained & rinsed
2 medium potatoes, diced
4 cups fresh spinach (or 1 bag frozen, thawed & drained)
1 small onion, diced (optional)
1 clove garlic, minced (optional)
2 Tbsp oil
2 cups vegetable broth (or water + bouillon cube)
Salt, pepper, cumin or paprika – about ½ tsp each
Optional: splash of lemon juice

Chickpea Vegetable Stew

Instructions
1. Heat oil in a pot over medium heat; sauté onion and garlic 2‑3 min.
2. Add potatoes and cook 5 min, stirring.
3. Stir in garbanzo beans, spinach, and broth; bring to a boil.
4. Reduce heat, cover, and simmer 15‑20 min until potatoes are tender.
5. Season with salt, pepper, and spices; add lemon juice if desired.
6. Serve hot.

Low‑cost tips – use canned beans, frozen spinach, and a bouillon cube for broth. One pot, cheap and filling. Enjoy!
