Ground Beef and Potato Hash
Ingredients
1 lb ground beef
3 medium potatoes, diced into small cubes
1 small onion, diced
1 bell pepper, diced (optional)
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp chili powder (optional)
½ tsp dried oregano
2 tbsp oil (olive oil or butter)
¼ cup beef broth or water (if needed)
2 green onions, sliced (for garnish)
Fried or scrambled eggs (optional, for serving)

Instructions
Prepare the potatoes: Heat 1 tbsp of oil in a large skillet over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 10-12 minutes, stirring occasionally. Remove and set aside.
Cook the beef: In the same skillet, add another tablespoon of oil if needed, then brown the ground beef over medium heat. Break it apart and cook until no longer pink, about 5-7 minutes. Drain excess fat if necessary.
Sauté aromatics: Add the diced onion, bell pepper, and garlic to the beef. Sauté for 3-4 minutes until softened.
Season and combine: Stir in salt, black pepper, paprika, chili powder, and oregano. Add the cooked potatoes back to the skillet. Stir everything together and cook for another 3-5 minutes. If the mixture seems dry, add a splash of beef broth or water.
Serve and enjoy: Garnish with green onions. Serve hot with fried or scrambled eggs on top if desired.
