Ground Beef Stew

Ingredients (serves 2‑3)
1 lb ground beef
2 medium potatoes, diced
2 cups collard greens, roughly chopped (fresh or frozen)
1 small onion, diced (optional)
1 clove garlic, minced (optional)
2 Tbsp oil (or a splash of water to brown)
3 cups beef or vegetable broth (water + bouillon cube works)
Salt, pepper, and any cheap spice (paprika, cumin) – about ½ tsp each
Optional: a splash of vinegar or hot sauce for brightness

Ground Beef Stew

Instructions
1. Heat oil in a pot over medium heat. Add ground beef, break it up, and brown 5‑7 min. Season with salt, pepper, and spices.
2. If using, add onion and garlic; sauté 2‑3 min until soft.
3. Add diced potatoes, collard greens, and broth. Stir, bring to a boil.
4. Reduce heat, cover, and simmer 15‑20 min until potatoes are tender and flavors meld.
5. Taste and adjust seasoning; add a splash of vinegar or hot sauce if desired.
6. Serve hot.

Low‑cost tips – buy ground beef in bulk and freeze, use a bouillon cube for broth, and frozen collard greens are cheap. A single pot is all you need. Enjoy!
