Ground Beef Stuffed Peppers
Ingredients (serves 2‑3)
1 lb ground beef
1 cup cooked rice (½ cup uncooked)
½ cup corn (fresh, frozen, or canned)
2‑3 bell peppers, tops removed, seeds discarded
1 Tbsp oil
Salt, pepper, garlic powder – about ½ tsp each
Optional sauce: ½ cup tomato sauce or salsa

Instructions
1. Preheat oven to 375 °F (190 °C).
2. Cook rice; set aside.
3. Heat oil in a skillet; brown ground beef 5‑7 min, seasoning as you go.
4. Stir in corn and cooked rice; mix well.
5. Fill each pepper with the mixture; arrange in a baking dish.
6. Pour sauce over the peppers; cover with foil.
7. Bake 25‑30 min, remove foil, and bake another 5‑10 min until peppers are tender.
8. Serve hot.
Low‑cost tips – buy ground beef in bulk, use frozen corn, and store‑brand rice; a simple tomato sauce or salsa adds flavor cheaply. Enjoy!
