Ground Pork Bowl

Ingredients (serves 2‑3)
1 lb ground pork
1 cup white rice (uncooked)
1 cup corn (fresh, frozen, or canned, drained)
1‑2 cups mixed vegetables (frozen peas & carrots work well)
1‑2 Tbsp oil (vegetable or any cheap cooking oil)
Salt, pepper, and any cheap seasoning you have (garlic powder, soy sauce, etc.)
Optional: a splash of vinegar or lemon juice for brightness

Ground Pork Bowl

Instructions
Heat oil in a skillet over medium heat. Add ground pork, break it up, and cook until browned, about 5‑7 min. Season with salt, pepper, and any seasoning you’re using.
While the pork cooks, rinse the rice and combine with 2 cups water in a pot. Bring to a boil, cover, lower heat, and simmer 15‑18 min until the water is absorbed.
When the pork is done, stir in the corn and vegetables; cook 3‑4 min until heated through.
Spoon rice onto plates or into bowls, top with the pork mixture, and add a final pinch of salt/pepper. If you have a splash of vinegar or lemon juice, drizzle it on now.
Serve hot and enjoy!
Low‑cost tips – buy ground pork in bulk and freeze portions, use frozen corn and vegetables, and cook extra rice for leftovers
