Kidney Bean Rice Bowl

Ingredients (serves 2‑3)
1 can kidney beans (15 oz), drained & rinsed
1 cup white rice (uncooked)
1 cucumber, diced
1 Tbsp oil
Salt, pepper, garlic powder – about ½ tsp each
Optional dressing: 2 Tbsp soy sauce + 1 tsp lemon juice

Instructions
1. Cook rice according to package; set aside.
2. While rice cooks, heat oil in a skillet; add beans, season, and sauté 3‑4 min.
3. Prep cucumber; set aside.
4. Assemble bowls: base of rice, top with seasoned beans and cucumber.
5. Drizzle dressing, if using, and serve.

Low‑cost tips – use canned beans, bulk rice, and a simple soy‑lemon dressing. One skillet and a pot are all you need. Enjoy!
